   BAKED POTATO BASKET WITH MY EXOTIC SALSA

                             This potato basket is  dedicated to all  potato lovers who really to wanted try something out of the box. In fact the potato are really healthy as long  as  it is not deep fried .It is actually Low calorie and  high fiber that offer   protection  against  various disease and keep our body healthy ... 



Ingredients for  Potato basket :
                                        2 large potato 
                                        olive oil spray 
  
   Recipe : 
        Peel off the skin and grate finely the potatoes and squeeze all the water .spray the muffin tray and take a tbsp of grated potatoes and press inside to make a cup shape .Bake it for 20 min at 425 degree F.(every oven varies .keep the eye on time ).

                                  VEGGIE KABOB

This kabob is made with a twist .Guess what my dear friends ?kabob is made with plantain or it is called as Green banana .. Isn't  sound interesting ...Low calorie ,high fiber ,low fat ,healthy and with out oil ...



 Ingredients :

                    1 large Green Banana or Plantain 
                    1/2 cup of sweet corn(cooked)
                    1/2 cup of peas (cooked)
                    1 shallot chopped
                     2 tbsp of coriander leaves
                     1/2 ginger garlic green chille paste 
                    1 tsp of paprika 
                    1 tsp of cumin powder 
                    1/2 tsp of dhaniya powder 
                   salt as required 
                   1 tsp of quick rolled oats (coarsely grinded )

Recipe :
          Peel the skin and cut into halve and  pressure cook  the plantain for one whistle .In a bowl add all the above ingredients except  spices and smash it and then  add spices and salt .Take a spoon and make a ball and then with help of  your palms make into a oven shape and just roll over the oats  and insert it into skewer .Meanwhile heat the grill with a pam spray  and place the skewers on it  for couple of minutes each side .Remove and sreve immediately with spicy green chutney .

Note : we can use flat pan instead of grill 
                    
  
       
                    BAKED  STUFFED MUSHROOM   


INGREDIENTS :
               10 to 12 button mushroom
stuffing :
               2 medium sized potatoes(boiled ,skin peeled and mashed )
               1 minced garlic
               1 shallot  chopped fine
               10 springs of  chives
               1/2 tsp of cumin powder
              1/2 tsp of curry powder
              1 tbsp of pesto sauce
              1 tbsp of grated Parmesan  cheese
              1 tsp of olive oil
             olive oil spray

Recipe
         Rinse the mushroom under cool water and pat dry immediately with  the paper towel and twist the stem and cut it off and use a spoon to scrape  inside gills .In a pan add  1 tsp of olive oil  and saute  the garlic  and shallot .Now add the mashed potatoes and saute it  .Turn off the stove  and let cool down .Once its cooled down add the chopped chives .Meanwhile preheat the oven for 350 degree F.
Now gently fill the stuffing inside the mushroom and top with  the  pesto sauce and grated parmesan cheese and keep it in oven for 20 minute .Serve hot with chutneys or ketch up

                                            
              ANCIENT  MILLET  KUZHIPANIYARAM

  • Ingredients:
        To Grind :
               1 and  1/2 cup of  Millet
                    1/2 cup of brown rice
                    1 cup of  idly rice
                    1 cup of urad dal
                    1/4 tsp of methi seeds
                    one small hand full  of oats
        To  Saute :
                   1 small white onion  chopped
                   1/2 cup of finely grated carrot
                   1 to 2 green chillies
                   1/2 of finely  chopped  three colored bell pepper
                   1/2 tsp of olive oil
                   salt as per taste
           Soak  the above ingredients for 5 to 6 hours  and grind them finely and let it ferment  overnight .In another pan saute the above ingredients .Once it cool down add to the fermented batter . Now fill   a  spoonful  of batter into the Appe pan for 2 to 3  minutes each side on medium flame .Remove and serve hot with Chutney ..

                    MARINATED  GRILLED BROCCOLI
         Many of our  favorite food list may not have broccoli but it has immense health benefits ...
                  
    Ingredients :
                    1 cup homemade hung curd
                                    2 tbsp of  Besan  or chick pea flour
                                    1/4  tsp of  paprika or red chilly powder
                                    1 tbsp of  dired herbs
                                     little bit  of   bombay sandwich masala
                                    salt as required
                                    Broccoli florets
                                   Olive Pam spray
    Recipe :
                                  Mix  all the above ingredients  in a bowl  for marination  except broccoli  .Meanwhile blanch the broccoli  and  then  marinated it  for 20 to 30 minutes.  Take  a grilled iron pan ( u can use normal nonstick pan too ) spray the olive oil and  place the broccoli florets and grill it  both sides fro 2 to 3 minutes on medium  flame .Remove and serve with any dip

                                 
                                             APPAM 

      Appam is an south Indian delicacy ......These soft and tasty appams were made out oats and brown rice ..

      Ingredients :
                  1 cup of brown rice 
                  1 cup of idly rice 
                  1/4 cup of urad dal
                   one small hand full of oats ...

    Recipe:
           soak all the above ingredients in water for 4 to 5 hours ..Grind into fine batter  ..(dosa batter consistency).And frement it  for  8 hours .
         Take a Appam kadai or deep pan and pour batter in to it and hold the sides of the pan with mittens and rotate the batter till forms a circle shape and keep back on the stove on medium heat and cover it with a lid ..After two minutes remove the lid and serve the appam which is   crispy around  sides and soft inside ....I served  with Vadacurry(side dish ).
