                          MULTIGRAIN MINI IDLIS

       Tired  of eating same old idlis ????....Try out this multi grain mini idlis with sauteed veggies ..



Ingredients :
               2  Cup of Brown Rice 
               1/2 cup of  toor dal
               small hand full of Rolled Oats 
               1/3 cup of Urad dal 
               1/3 of  Mung dal
              3/4 of   channa dal 
               1/2 tsp of methi seeds
 For sautee :

           1/4 tsp of mustard seeds 
               1 shallot
               3 tbsp  of mixed green peas and corn
               1/2 spoon of curry leaves powder  
               1/2 spoon of idly podi 
               1/2 tsp  of parika
               one small handfull of coriander leaves and pudina  leaves 
                                            Soak the above ingredients together for 5 to 6 hours and grind them into a thick idly batter consistency and should be fermented well .Take a tablespoon of batter and pour into mini idly mould and steam it for 8 to 9 minutes .Meanwhile take a kadai with  a tsp of ghee and add mustard seeds and then add the chopped shallots and green peas and corn .Add all the dry powders and after one minute add those mini idly into it and sprinkle some water and leave it for one more minute and turn off the stove .Garnish it with coriander and pudina leaves .Serve it with chutneys .


        TRICOLOR QUINAO WITH  POTATO BASKET CHAT

                Quinao is although referred as grain it is actually a seed from a vegetable related too spinach ,swiss chard . It is rich in protein , riboflavin ,antiseptic and fat free and more over gluten free.


 Ingredients :
           1 cup of dry tricolor Quinao 
            2 cups of water 
            1 small zucchini chopped
           1 shallot chopped 
           1 tbsp of raisins 
           1 tbsp of  sliced almonds 
           1/2 of cup of sweet corn 
            1/2 tsp of ghee 
      
Recipe :
   Boil the water and then add washed quinao into the boiling water and cook it for 15 to 20 min (approximately ).In another pan add ghee and add onion .Once it becomes translucent then add chopped zucchini .Then add sweetcorn ,raisins and almonds .Finally add the cooked quinao and serve ..

Note : you can add any vegetables into it ...




                              DOSA PIZZA
Are  u guys tired of eating same old  Dosa ????... Try out my unique exotic recipe of pizza made out of  oats ,quinao  and brown rice dosa.... ;)





Ingredients :
            1 cups  Dosa batter (made out of oats ,                     brown rice  and quinao )
           1 onion sliced lengthwise
           1/2 bell pepper sliced lengthwise
           Button mushrooms (cleaned ,rinsed and                    sliced lengthwise 
           olives ( as per taste )
           1 jalapenos 
            Feta cheese and grated mozzarella cheese 
           1/2 tsp of olive oil 
           olive oil spray 
            ketchup (optional)
           2 tbsp of Pesto sauce 

           
Recipe :
        In a pan saute onion and other veggies with a 1/2 tsp of oil .Remove it from the stove  .Let it cool down .  Meanwhile in a another nonstick pan make a dosa for the base for the pizza .Once the dosa is  half done remove it and apply the pesto sauce on it and top it with veggies and cheese  .Now  place inside the oven at the broil mode for 2 to 3 minutes at 375 degree F  till the veggies get crispy and cheese melts .Remove carefully and serve it ..



                          ROTI  NOODLES

    Guess by the name !!!... Yep these noodles are made  out of rotis ...Indian flat bread made with whole grains .Low fat , low calorie, healthy compared to usual noodles ..Why ?? to wait ...let us try it out ....


Ingredients:
       For Roti 
           1/2 cup of  Whole wheat
           1 tbsp of oats flour
           1/4 tbsp of flax seed meal 
           Water and salt as per required 

     For sautee:
             1 small onion  finely sliced
             1 Jalapenos finely sliced
             1/4 cup of corn or baby corn 
             1/4  cup of grated carrots 
             2 spring onions
             1 tbsp of  vegan hoisin sauce 
             1 tbsp of  Worcestershire sauce (fat free low sodium vegan )
             1 tsp of tomato ketch up 
             1 spoon of Oil
             few sprinkles of dry chilly flakes
       Note :you can add veggies and sauces according to your taste .
 
Preparation :
      Make a smooth  dough out of the above ingredients for rotis and keep it aside for 15 to 20 mins.
      After 20 minutes knead the dough the again and make into small ball.Then slowly roll the balls into small circle shapes and cook the roti on medium high heat for one min before turning over ,then turn it another side for one more minute .
     Once it is slightly cool down roll the rotis and cut it into a thin flat trips ..Here we got our Noodles :)

     Meanwhile  place a pan or wok on stove on medium heat and add  a spoon of oil  and onions .
Let it translucent .Now add all the rest of ingredients and slowly add the sauce and mix well for 2 mins.  Now add the thin trip flat noodles and toss it for an another min and sprinkle the spring onions and serve hot ....
